Overview: bromelain is a group of thiol hydrolytic protease extracted and refined from pineapple, which has a molecular weight of 33000 and an isoelectric point of 9.55. Bromelain is mainly from plant stem, so it is also called stem bromelain. The main component of bromelain is a kind of protease containing sulfhydryl group. It also contains peroxidase, acid phosphatase, several protein inhibitors and organic active calcium. Its active center is sulfhydryl (- SH), which can hydrolyze various proteins and carry out biochemical reactions. It can be widely used in food, medicine and biology industries.

The data shows that the therapeutic effect of bromelain is better at high dose.
